Our story originates in the heart of the province of Labourd, in our Basque Country’s green and hilly setting.

The sepia-toned photo album that my grandmother showed me brought back to life the faces that, for 4 generations, have built this house where I was born.

Generation after generation, we’ve honoured nature and time to create flavours that will delight your palate. There’s no secret spell book – it was my father, Etienne, who perfected our recipe for success.
Today more than ever, Maison Garat is the Basque signature of your gourmet poultry.

CHICKENS

Our Free-range Yellow Chickens come from the oldest strain of yellow chicken traditionally raised in the south-west of France. A slow-growing chicken that needs to be ‘given time’. They are raised locally, between the Basque Country, Landes, and Béarn, in small batches and outdoors for more than 3 months.
Our chickens are pampered and fed exclusively on plants, including whole kernel corn (which contributes to their beautiful colour), all GMO-free, of course.
This is how our free-range yellow chickens become ambassadors of knowledge passed down from generation to generation, and how they can proudly wear our ARADOA* coat of arms.’

GUINEA FOWL

Our guinea fowl are raised in the heart of southern France for an above-average length of time, for a minimum of 100 days on small farms in the Basque Country, Béarn and the Landes.
Their diet, composed of cereals (GMO-free), produces beautiful guinea fowl with firm, tasty flesh with a naturally pronounced taste.

PIGEONS

Our pigeons are raised in a traditional way to preserve the authenticity of this renowned gastronomic product which is acclaimed by a large majority of chefs.
They are raised for at least 30 days in the nest by their parents, following a natural growth rate that ensures exceptionally tender products.
Their diet (non-GMO) is mainly composed of whole kernels (corn and wheat).
The plucking is done with wax, then finished by hand to ensure optimal conservation and impeccable presentation.

QUAILS

Our quails come from a strain that enables you to rediscover the old-fashioned quail and its authentic taste.
They are raised in low-density farms. This allows quails to grow naturally and at their own pace, resulting in very tender meat.
Their diet (GMO-free) is 100% plant and mineral.
The plucking is done with wax. Hand finishing ensuring optimal conservation and impeccable presentation.

DUCKLINGS

Our yellow ducklings come from the Muscovy duck strain. We have chosen them for their impeccable taste.
They are raised for a minimum of 70 days in small farms.
Their (non-GMO) plant and mineral diet is more concentrated in corn than standard Muscovy ducklings resulting in a tasty meat with a more pronounced taste.
The plucking is done with wax. Hand finishing ensuring optimal conservation and impeccable presentation.

EGGS

Our eggs are “free-range” and come exclusively from small, local farms that respect our environment and the welfare of the animals.
